My mother is known for her gifts. She is talented, don't get me wrong, but that's not the gifts I am talking about. Every Christmas there is one "random" gift. (I think we have covered this before.) Sometimes there are pictures of gifts she bought but can't find. And then there are all the GREAT gifts. She really does give great gifts.
For my birthday in May, one of my gifts was a can opener. An electric can opener. I had a cheapo one in the past and it annoyed me so much I trashed it. Since then I have been completely happy with my KitchenAid handheld can opener. My mother was concerned I would end up with Carpel Tunnel and gave me this:
If I am honest with you - and I was taught to always be honest - the can opener has been in a box under the sink since May. Then I joined a freezer cooking group and my first meal was Mexican Soup. That's right. I had to make and freeze six recipes of Mexican Soup. The counter looked like this:
I am so very thankful for my can opener.
And VERY excited about this freezer group. We meet every two weeks to exchange meals and I end up with six dinners ready to be used over the next two weeks. LOVE it.

ReplyDeleteBe sure to check out the September (already?!) 2010 issue of Real Simple. Mine arrived yesterday in the mail, not sure when it hits newstands. One of the features in the food section is an article that includes big batch recipes for freezer groups.
